Vinificatione
The harvest is carried out by hand so as to choose the best grapes. After the de-stemming and pressing the must with its skins undergo an alcoholic fermentation which lasts for about one week after which the wine undergoes various pumping over’s. At the end of the alcoholic fermentation the wine is drawn off, the wine obtained undergoes several rackings after which it is left to age in stainless steel tanks, where, after the malo-latic fermentation, the wine is bottled.
Organoleptic character
bright ruby red, vinous bouquet, intense, crisp and fresh when young. To the mouth harmonious and captivating, dry and of a good persistence.

well suited with typical dishes from the Oltrepò Pavese, red meats, boiled and roast meats and salami.

PINOT NERO COSTA DEL VENTO DOC 2018

Vinification
The grapes come from the Costa del Vento vines situated at 400m asl, where the choice of the cloans and the favourable position, express Pinot Nero at its best. The grapes are hand harvested. After de-stemming and pressing the must and the grape skins undergo an alcoholic fermentation which lasts for about one week during which several pumping overs are carried out. At the end of the alcoholic fermentation the wine is drawn off. After several rackings the wine obtained is left to age in stainless steel tanks where after the malo-latic fermentation the wine is bottled.
Organoleptic character
ruby red, intense bouquet with reminisces of small woodland fruit. To the mouth, a mild tannin, the olfatic fruity note is reconfirmed.

Food pairing
this young wine is ready to drink. It is excellent with hors d’oeuvres, risotto, and meat based starters, grilled meats and fresh cheeses.

Vinification
After a careful valuation of their ripeness, the harvest of the grapes is carried out by hand. The must obtained undergoes a short pressing with the skins so as to obtain its delicate pink colour. The wine then undergoes fermentation with selected yeasts in pressurized temperature controlled stainless steel tanks. The wine obtained is left to rest in stainless steel tanks until it is bottled.
Organoleptic character
a subtle rose colour. A fine, delicate bouquet with reminisces of raspberries, strawberries and other woodland fruit. To the mouth it is vinous, intense, harmonious and slightly sparkling.

it is well accompanied with aperitifs, delicate or fish based starters, also great with pizza.

Intense ruby red with purple nuances. Delicate, intense, clear fruity aroma with hints of marasca cherries and raspberries. Sweetish to the mouth, full, with a good persistence. Slightly sparkling.

Well suited with important salami dishes, meat based starters, (such as braised meat ravioli) excellent with braised and roast meats and all kinds of red meats.

Vinification
to obtain this wine the grape bunches are thinned just after they begin to develop. The grapes then undergo a late manual harvest so as to choose the best bunches. After the de-stemming and pressing, the must obtained together with its skins undergo an alcoholic fermentation which lasts for about one week, during which several pumping overs are carried out. At the end of the alcoholic fermentation the wine is drawn off and after several rackings it is left to mature in stainless steel tanks where the malo-latic fermentationtakes place after which the wine is bottled and left to rest in our cool cellars for at least 2 years before selling. This wine is only produced during the better vintages and in very limited quantities. A wine well suited for ageing.
Organoleptic character
deep ruby red. Intense bouquet, hints of red currants, marasca cherries and almond reminiscences. To the mouth it is sapid, full and smooth.

well accompanied with mature cheeses also on its own at the end of a meal..

SANGUE DI GIUDA 2017

Vinification
the grapes are hand picked; this allows to make a careful selection of the fruit. After the de-stemming and pressing, the must and skins undergo an alcoholic fermentation which lasts for about a week during which several pumping overs of the must are carried out. At the end of the alcoholic fermentation we proceed with devatting. After several rackings the wine obtained is left to mature in stainless steel tanks during which the malolatic fermentation takes place. The wine is then bottled.
Organoleptic character
Ruby red with vinous, fruity hints with marked red jam fragrances. To the mouth, pleasing, sweet, delicate, vibrant.
Alcohol
8% vol
Food pairing
ideal match with sweets, with sweet pies and tarts, small pastries, excellent with mature cheeses and roasted chestnuts. Delicious with strawberries.
